As a resilient single mother, she successfully raised two sons while excelling in her roles as a chef, instructor, and entrepreneur. Beyond her culinary prowess, Chef Rosaria has been an active board member of various nonprofits, including Slow Foods 1st Coast and Dig Local, showcasing her enduring commitment to community service from the West Coast to the East.

The visionary founder of T.C.C.C. Enterprises, Chef Rosaria oversees a consulting company, a spice startup with a focus on cultural studies, and an event company. Her recent inclusion on the sales team of St. John’s Food Distribution in St. Augustine and Jacksonville allows her to leverage her extensive local network, expanding local vendor representation, developing a farmer-driven produce department, and making significant inroads into the Jacksonville market.

Chef Rosaria's dedication extends beyond professional realms, as she actively supports the food and beverage industry. Her unwavering love and commitment are evident in her relationship with her sons, Matthew and Mitchell.
